The Best Pizza in Venice CA. I'm Sayin It

I didn't take over a 30-year-old pizza institution on one of the most famous streets in Los Angeles to make pretty good pizza. I came to make the best pizza in Venice. I rebuilt everything. The dough. The ingredients. The whole program. From scratch. While keeping the doors open, the team employed, and the neighborhood fed. Nobody handed me anything.

The standard

48-hour fermented dough. Every day. No shortcuts, no skipping steps because it's busy. The crust has to be firm underneath, crispy at the edge, open in the crumb. You should hear it when it folds. If you don't hear it, it's not ready. The cheese melts clean. The sauce tastes like tomatoes. The pepperoni curls at the edges and pools with its own fat. This is not complicated. It just requires caring more than the next guy every single day.

The receipts

New Yorkers come in and say it reminds them of home. Venice locals who've been coming since 1995 say it's better than it's ever been. A guy stopped in on a layover from Japan and said he didn't expect to find pizza this good in LA. Of course we have haters, a few that can't handle change, it's not gonna stop me. We're busier than this shop has been in years. It's working and big things on the way.
